They are called mostly "pensions" spelled a bit different for each country. But we stayed in Gmunden, Austria, right on the lake at the base of the alps for $25 each per night. You just go to the tourist information center and they tell you who has a room for rent. I would only make a reservation for your first night or two, then venture out from there.
